Chicken Salad Recipe & Recipe Box Project

Hey ya'll!

Today I want to share a recipe with you that has become a family favorite in the Tedder household. Plus, a fun gift idea.

The first time I made this recipe I wasn't so sure I'd be a fan. Why? Well, call me crazy but I don't like mustard. I never have. I remember as a kid seeing people squirt that gross yellow mustard on their hotdogs, instead of the obvious choice: ketchup! I still say ketchup can go with almost anything! :P

After I combined the honey dijon mustard with the other ingredients though,  I tried it out and I was sold. I knew this would be my go-to recipe for chicken salad.

Chicken Salad
Serves: 5-6
Ingredients:
2 Chicken Breasts (seasoned, cooked, and cut up)
1/3 cup chopped apple
1/3 cup grapes, cut in half
1/3 cup chopped celery
3 Tablespoons Miracle Whip of Plain Yogurt
3 Tablespoons Honey Dijon Mustard
2 teaspoons olive oil
Salt and Pepper to taste

 In a large bowl combine mustard, olive oil, and miracle whip.
Whisk until combined.

Add in the rest of the ingredients and mix gently and thoroughly.

 Serve on warm toasted bread.
 What did my kids think of it?

They ate every bite! Still a tasty favorite in the Tedder house!

Now, for a fun project. :) I was thinking I should really document the recipes that are proven to be hits in my family, so I started making a recipe box with cards. I'll of course jazz up the box when I can find the time. I'm thinking some ribbon will be on there for certain. Which ribbon would you use?



I used my 1 3/4 inch circle punch (119850) and Modern Label punch (119849) to create a unique tab for the index card. What I'd really love to own are the File Tabs Edgelits (133729). They look so fun, and you could make files or file labels so easily!
